This is our Little Waddon Vineyard sparkling ‘Col Fondo Rosso’ 2021
Our single estate Regent grapes grown here on the Jurassic Coast, sealed in tank with CO2 for a twenty-two day skin contact maceration to help break down the skins, followed by a wild fermentation.
Later blended with a portion of oak barrel fermented Triomphe D’Alsace to balance the acidity, and then bottled with approximately 10grams of sugar per litre which produces a second fermentation in bottle.
This produces a low intervention Sparkling Red wine that gives frizzante ‘little’ red bubbles!
Loganberry on the nose, a moreish taste of vanilla pods and blackberry fruit with red chocolate!
Col Fondo is a traditional Italian natural re-fermentation process in bottle: ‘Con il fondo’ translates literally to ‘with the bottom’ meaning sediment or lees is present; so if this bottle has been travelling we suggest you stand it up on it’s bottom in the fridge to rest a while before opening.
