Col Fondo is an Italian ancestral method semi-sparkling wine made by creating a second fermentation in bottle without disgorging it –
‘Con il Fondo’ translates literally as ‘with the base’ – meaning sediment or lees is present –
This is all part of the wine style and adds an interesting complexity and mouth feel –
Our single estate Seyval Blanc with a blend of Pinot Blanc and Pinot Meunier Rosé to deliver this delicious Rosa. A first wild fermentation in tank, later blended, followed by a second fermentation in bottle
A low intervention wine giving frizzante ‘little bubbles’ –
Peaches and Plums on the nose, brioche with a hint of almond, and well balanced acidity –
Grape variety: Seyval Blanc, Pinot Blanc, Pinot Meunier –
