This is our award winning Little Waddon Vineyard sparkling white Col Fondo 2023
Col Fondo is an Italian ancestral method semi-sparkling wine made with a second fermentation in bottle and not dis-gorged
This is an intended part of the wine style and adds a wonderful interesting complexity and mouth feel
‘Con il Fondo’ translates from Italian as ‘with the bottom’ – meaning sediment or lees is present.
Whole bunch pressed Seyval Blanc grapes grown here on our vineyard on the Jurassic Coast
An initial wild fermentation in tank, followed by malolactic fermentation, cold curing over winter, and then the second fermentation in bottle
A low intervention wine giving frizzante ‘little bubbles’
Tasting of lemon shortbread, citrus fruit with a hint of almonds
A well rounded low intervention wine with a well balanced acidity
