Col Fondo is an Italian ancestral method semi-sparkling wine made by creating a second fermentation in bottle
‘Con il Fondo’ translates literally as ‘with the bottom’ – meaning sediment or lees is present. This is all part of the wine style and adds an interesting complexity and mouth feel
Part skin contact, hand de-stemmed and foot crushed single estate Phoenix and Seyval Blanc grapes grown here on our vineyard on the Jurassic Coast
First wild fermentation, followed by malolactic fermentation, cold curing over winter, and then second fermentation in bottle
A low intervention wine giving frizzante ‘little bubbles’
Raspberry and apple hedgerow, a hint of nutmeg & brioche, well balanced acidity with an elderflower finish
Grape variety: Phoenix, Seyval Blanc, Regent
