This single vintage, small batch, unfiltered organic Red wine is made from our Regent grapes grown here on the vineyard
We’re very excited with this minimal intervention small batch wine which has benefitted from being de-stemmed, and then only fifty percent pressed, and that juice then regularly poured back over the remaining whole grapes to carbonically macerate them
After four days of this very manual process, it was all pressed and the juice was transferred to our French Oak barrels and left to ferment with it’s own wild yeasts
Having gone through fermentation, and malolactic fermentation, the wine was transferred unfiltered to it’s bottle and corked with NO sulphur added
So it remains a living wine and continues to develop it’s mellow fruit, with a hint pf pepper, a little sprinkle of chocolate and vanilla, and smooth texture with a great balance
